Boarding passes are much better evidence than itineraries.

Pictures are secondary evidence.

I did not keep any purchase receipts. I found in addition to the evidence I have a baggage claim receipt.

What about credit card statements showing the purchases with date/location?

Yes, the credit card statement indicates date and location, in addition, it says ATM transaction. Meaning it was a physical transaction. Not like an online transaction. 

 

Would this suffice? Also, I do have passport stamps, but only for Germany (the connecting country). It would at least confirm that I indeed traveled, but yet I do not want to confuse the person reviewing my petition. My fiancee and I met in another country where my passport was not stamped for whatever reason.

All of that will be in your favor.  Was it another western country where you met?  USCIS realizes that not every overseas POA does passport stamps anymore, as most have gone to electronic entry records as well.

Year, too? Just verifying as this is one of the reasons why boarding passes are not suggested versus the passport stamps (they often lack a year).
