We had submitted our i751 forms and recently noticed that they have updated the status saying Case Is Ready to be scheduled for Interview.

They have not even requested any additional evidence. Is it normal that now they would schedule interview without even requesting additional evidence?

Well this means that the evidence you sent is enough.

Prepare yourself for the interview.

As other on the forum have said, the evidence that you sent was enough for USCIS. Prepare for the interview and bring evidence from when you submitted to now to show continued evidence in case they ask.
