My MIL is co-sponsoring me. Sweet lady but it takes her FOREVER to get things to us. After close to a year of asking she finally gave use her 2017 tax return but messed up on the paperwork and forgot to sign. I'm kinda stressing because I heard to use last years return you have to file before April 1st and if I ask her for her 2018 one I think it might take another year!

Is the cut off April 1st or April 30th?

hi

it's usually after tax season is over, but I've seen that in some cases immigration is already requesting 2018 taxes. has she done them already? since it takes her a long time, I would start asking her for them

If you submit to NVC before April 15 (or whatever the exact deadline for filing is THIS year) then 2017 can be the latest return provided.  However, it would be wise to carry a copy of the 2018 return and updated evidence of "current income" to the interview.
