Employment letter will be needed for K1 interview and Adjustment of Status application(I-864 supporting document). My question is will employment letter be returned back after interview? if it will not, I may ask my petitioner to get 2 employment letters before interview. One is for coming interview and the other for futurn AOS. Any opinion for it? Thank you!

If your petitioner has enough income above the poverty guildline, you don't need to provide the employment letter for K1 interview except the petitioner can't offer enough financial support for you. And for AOS,you'll need a "recent "employment letter . So the one you prepare for K1 interview won't be appropriate when you mail out the other forms for AOS.

Employment letter is not needed for aos,  it is an example of the type of evidence that you can provide

YMMV
