For proving the bona fide nature of my marriage I've got 1) certifications from city hall (Madrid) showing that my wife and I live at the same address 2) A phone bill with both of our names on it 3)airline tickets showing travel together on multiple occasions 4) pictures together with family over a long period of time 5) A notarized declaration from my parents regarding the bona fide nature of my marriage.

Is there any reason whatsoever for me to include an affidavit from her parents as well?

Not really, but you can if you want to. Affidavits are low on the list of proof.

Affidavits are low on the list of "evidence". Evidence and "proof" are not synonyms. Yes, usually affidavits from anybody are a waste of time. It's a Catch 22. For those who have too little other relationship evidence, affidavits from people close to them, carry little weight.
