What is my status right now? What am I considered as?

Timeline

I'm still waiting for my green card and just started filling the AR11 for change of address... I'm not permanent resident yet, I'm not a student or a visitor... so probably should put on there "other" but what is the specification?

K-1 visa holder with an adjustment of status application pending (kinda long! :P), or be short and put "K-1, Adjustment of Status pending", they should know what you mean.

K-1 Visa Timeline AOS Timeline

- Aug 31st, 2011 - Mailed I-129F package - May 29th, 2012 - Mailed AOS/EAD/AP package

- Apr 13th, 2012 - Visa received - Aug 24th, 2012 - Green Card received

ROC Timeline

- May 19th, 2014 - Mailed ROC package to CSC

- Aug 8th, 2014 - Green Card received

N-400 Timeline

- Dec 29th, 2021 - Filed online. Got notice that biometrics will be reused.

- Now waiting...

But my K-1 is well expired...

Your K-1 visa became null and void the moment you used it to enter the US. However, using the K-1 to enter and fulfilling the terms of getting married within 90 days after entry is what made you eligible to adjust status. You are awaiting your adjustment of status and are in a period of authorized stay at the moment. Putting 'Other: K-1, adjustment of status pending' would work just fine. USCIS will understand that perfectly.
