My fiancee is submitting our Packet 3 today. My employment letter that she is submitting (along with all the tax returns, K-1s, paychecks etc.) is dated July 20, 2012. I have been with the same firm since 1991, basically stayed with the same firm right out of law school. We reckon our interview will be in about 2 weeks time or so. Should she bring a more recent letter or is within the last month good enough? Thanks.

The July one should be enough. July is not that far back.... I don't know what others think, but I wouldn't worry much.

You should be fine. I believe mine was 3 months old by the time my husband had his K-1 interview and he had no issues.

Total elapsed time between filing I-129F to GC in hand 569 days or 1 Year, 6 months, 22 days.

within a 3 months period should be fine. just try make sure everything is within a 3 month period prior to the interview

In addition to what everyone said, send her your last three bank statements as well. She may not need it but if they have questions they can draw information from the movements in your checking account.

All they care about is those last 3 years tax returns. If you have that, you're good. Unless you owe the IRS any money. I bet they barely look at the I-134, if at all. It's non binding document anyway. If it was a I-864, different story.
