Okay, I found where it says to include a photocopy--glad I saw that posted here or I would´ve missed it! Another question...it says, all "accompanying family members". I´ll be flying home with my husband, but I´m a USC, so I´m assuming this does not apply to me. Am I correct? They only mean other immigrants, right?

Yep. send originals. Don't send notarized copies. they don't accept notarized copies. NVC only accepts Original document OR "Certified Copy" of the document. "Certified Copy" here means that the copy has to be from "Issuing Authority". So, for example, if you want "certified copy" of your birth certificate. Go to the authority who issued your original birth certificate and request them to provide certified copy.

The NVC wants originals then completes it's case and sents us a embassy appointment letter directing us to their web site which says Ensure that all necessary original documents will be available at the time of the interview? Does this mean I have to get all those documents again? Or will we just need the passort, OF-230-I, OF-230-II, photos, and supporting evidence of relationship?

This link from NVC website states that you also need to send photocopies of original when you send originals to NVC. http://travel.state.gov/visa/immigrants/info/info_3195.html

Document Requirements

The applicant and each family member who will accompany the applicant to the United States will need to submit the following original documents or certified copies of the documents listed in this section from an appropriate authority (the issuing entity).

In addition to sending the original documents or certified copies of the documents to the NVC, the applicant and each accompanying family member must submit a photocopy of the original documents or certified copies of the documents.

It only means US officials at some point would like to see your originals, say if you have sent your original birth ceritificate at NVC but certified marriage certificate, then during the interview you have to show them your original marriage certificate.

The last page of our appointment letter says "[name of beneficiary/applicant] must bring the following to the visa interview: Any original documents that were requested by the NVC but were not submitted to the NVC...." so I don't think you need to bring originals which you have already submitted with your DS230. In our case, I submitted a certified copy of our marriage certificate so I will bring the original with me for the interview. For police records, however, I submitted the originals so will not be obtaining fresh ones for the interview. I hope this is right! Good luck.
