I want to make sure my AOS package for I-130 and I-485 will get approved So i did all correctly and I am even sending extra documentation

would that be a problem?

My cover letter has 2 pages and half, you guys think I should send less documents or is not a problem to send extra documentation that i believe that can be useful like proof of my family taxes in my home country proving that I am not here to use the government , proof that I was studying in my country and had health insurance things like that plus a lot of proof of bona fide marriage

In your opinion would a well complemented documentation help me or bother me? Also please, how many G1125 E I have to send if I am filling I-130 with 1-485 I-131 I-175?

What visa did you enter the US on? If a K-1, you don't need the I-130. You posted in the AOS from family-based visas, suggesting a K-1. If not a K-1, I'll move your post to the AOS from work, student and tourist visas.
