Mom's information is her individual information. From what you've stated her income is zero. If she does not have a spouse then her household income is zero.
Your I-864 will show a household of 4 (you, spouse, child, mom) plus the intending immigrant for a total of 5. All of your income is listed on your individual I-864.

What a mess. I feel sorry for your Gretchen.
Give her a year or 2 when she gets bored in the house taking care of you and started to feel like a prisoner. By that time she would wish she had a job.

This is correct, from what I am reading. I just went through the instructions again. You have to have been married a full 3 years when you file the application, and have been a PR for 3 years - 90 days. You were married for less than 3 years when you applied. This could be troublesome for K-1 entrants who got their greencards in less than 3 months after filing, because they couldn't go off of their "resident since" date, because they will not be married 3 years when it comes time to file.
    From the instructions:
"If you are applying based on five years as a lawful permanent resident or based on three yeas as a lawful permanent resident married to a U.S. Citizen, you may apply for naturalization up to 90 days before you meet the 'continuous residence' requirement. You must meet all other requirements at the time that you file your application with USCIS."

Don't worry, sometimes it takes a while for case status online to show.

Don't do that because your fiance will have problem on her PORT OF ENTRY. I'll tell you my experienced. When I was interviewed by the customs officers at my POE. The officer asked me many times if me and my then fiancee got married abroad. Of course I told him no because that was the truth. He even told me, that he can send me back home right then if I lied. Because, apparently someone called the immigration after I got the visa that " we had a wedding in my country". So 2 of the officers checked all my luggage which took them an hour. I did not know what they were looking but I was told that they were looking for marriage certificate and wedding pictures.
So don't make things complicated. Go for the legal route.
