Hi @omnelson you should be able to replace your SSN card, removing wording "Valid for work only with DHS authorization". Non-restricted card and driver's license is all you need to prove your authorization to employer.
 
Of course you can show your NOA letter with expired green card if needed. You can also use it to renew driver's license.

You can submit those. I don't see a problem.  

No problem with including these, just make sure you save electronic statements / policies elsewhere (Google Drive, memory stick etc) so you won't have to rely on companies to provide it later if needed. Some companies only keep this info for so long.

It's not a requirement but a good choice to include for notifications.

Well you gonna send your packet to a lockbox so it's fine to use it. Many prefer to get their case number asap instead of waiting forever for the mail to come but it's not a mandatory form.

I know several people have filed the I-865 late.  None, to my knowledge, have had any issues at all. 

You don't need to mail the AR11 for yourself. Nobody gets more than the confirmation email. And even if they messed up and never updated your address they'll now when you send your ROC paperwork. 
Your wife is your main sponsor btw. Not a secondary joint sponsor 😉

No, don't send them more paperwork! You've already sent it, you're fine.
Same as with the I-865, you don't need to send it again. 
Several sponsors have sent the I-865 late. No impact on your application.
