Is it normal to not hear about biometrics for awhile, or is this something we need to pursue? Our service center is the National Benefits Center if that matters.

Albeit having an interview for AOS does not automatically mean your ROC interview will be waived.
Nope. The only interview we've had in the entire process was at Montreal when the spousal visa was granted.

However, it said one was mailed October 3rd.It took more than 2 weeks to receive our notice in the mail. It was posted online in spouse's USCIS account within a few days. We have yet to hear back about a biometrics appointment.
I'm a little concerned that we got the National Benefits Center instead of a service center. We sent a very detailed packet, so I don't what we could have possibly missed.

No, it does not. It is definitely a personal preference.
Many people do it quarterly. The idea is just to show you have them for the longevity of your marriage - if possible. If you have other strong evidence (which you should), sending quarterly statements should also be plenty.Excellent--thanks!

Starting work on my I-751 packet. Does every single bank statement and bill need to be included? Or can it be quarterly?

Passport arrived today!
Shipping notice came via email Friday, Nov 5th and our interview was Wednesday, Nov 3rd.

Interview yesterday at 8am. Short, 5 min interview. A little over 2 hours total there.
Consular Officer: "I intend to approve your visa application."
Checked the courier service today and it says the visa is issued!!

Does the day of the week matter for doing a POE crossing/visa activation? My spouse and I are talking about a quick cross to activate (and start the ball rolling on getting the social security card and green card sent) and return to Canada so that he can finish out his job before moving here, but getting away during the week to do it is going to be difficult. If he went on a Saturday, would there be officers available or would it be a longer wait?
It looks good that our interview will be in November, so we're planning ahead.
