They won't have any trouble at the border. If anything you might get a call from the health unit in your area, but as this is not related to TB you probably won't hear from them.

The originals/certified copies of the visa applicants' civil documents are required for the consulate interview. As for the petitioner's documents, typically for IR5 cases, only the petitioner's birth certificate is required to be original/certified copy, but best to check the instructions from the consulate.

I don't (unfortunately) have an answer to your question, but when my stepdaughter went through Guangzhou, they sent us an email with the appointment time and date, we had no opportunity to schedule it. It would've been nice to be able to schedule it, since her appointment was scheduled for 17 days from the date of the email 😑
There are a few facebook and wechat groups that have a lot more activity for current applicants - I would take a peak there.

My parents-in-law plan to start a restaurant when they come here (they have owned restaurants before ), and work for at least ten years, if not more. They are wholly uninterested in coming here to sit around and do nothing,
It also seems unlikely, given the fact that I will have a PhD and my spouse a MS, that our family income will remain at its current level for very long.
Families like ours (as well as those in considerably 'worse' circumstances) have long found a way to make things work in the US. And, to be quite frank, the question of how we plan to make things work is largely (though admittedly not completely) immaterial to the query, which is, of course, regarding whether they are likely to be admitted.
