The system is a bit weird. When I applied I didn't even get that question. Also, I applied on the 13th but my NOA shows I applied on the 12th.

No, you cannot be married and file as single. If IRS didn't catch you, USCIS will.  
 
And nobody should try to outsmart the gov, for example, if your tax return record has massive discrepancies than IRS tax transcript, they will find out sooner or later.

It seems to me the VO finds your business model and income concerning. whilst 4,000 Malaysian Ringgit is an above decent salary in Malaysia, it  is merely 1,000 USD  a month. I will find it's hardly convincing that someone makes less than 1,000 a month could afford a two-month long trip to the states. It's like somebody working at McDonld's here saying that s/he is going on a two month long trip to Switzerland or Norway.
 
I think you might want to shorten your trip two two weeks or wait till your circumstances are changed.

I purposely did the e-file last week hoping it would move faster than the NBC route. Could it possible that USCIS had fixed their ELIS issues? (What am I thinking?!)

Makes sense to me.  If she didn't understand  the meaning of the questions,then how could she answer them truthfully?  

USCIS is unlikely to expedite an application simply because your aging husband has certain expectations.  Him or yourself suffer no loss in this case. But alas, give it a try.
