NVC will schedule the interview based on Consulate availability for interviews: it is not up to NVC, but it is the consulate that decides when they have open slots for interviews. As @Crazy Cat said, you just have to wait it out

Replace or add the updated form? Will "replacing" impact the status of the case being DQ? I would just "add" the updated affidavit of support and hand carry it with all supporting documents to the interview

that is the "official" status right now of the case. You should just wait it out and eventually it will update when there is a movement on the case. Good luck

for NVC, you only need digital copies uploaded to the CEAC portal. BUT, for the interview, you will need the originals and original translations of all the documents that are not in english. You don't need the affidavit of support during the interview as they never asked for it in the past. I always recommend to take the affidavit of support you signed with all supporting documents (tax transcripts and all) to the interview, just in case

I864 is required for I485 as it is the binding financial document to ensure the intended immigrant will not become a public charge.
