As a Chinese woman growing up in the rural China, I'd bride price practice has been rather critisized even in Chinese society nowadays. Consider this a huge red flag.

Just had my oath today and now am proud citizen! ps. I had a traffic ticket shortly after I passed the interview for failing to come to a complete stop at a stop sign. I was very worried what to answer to the question "Have you knowingly committed any crime or offense, for which you have not been arrested; or have you been arrested, cited, charged, indicted, convicted, fined, or imprisoned for breaking or violating any law or ordinance, including traffic violations?" So I decided to leave it blank and brought the notice form and the traffic ticket there. Sorry to hear your dilemma, OP. A bit off the topic but I would like to give my two cents. I'm from China, too and totally understand your worries. I don't know if you are their only child, nonetheless I think they deserve a chance to try to understand you for being who you are and accept your partner into their son's life. If you never try you will never know. With the globalization going on in the recent decade and everything, perhaps your parents would actually be more mentally prepared than you think. Perhaps they are already aware of something. Eventually I think your parents will come around and understand instead of losing one son, they can actually have two!

I don't think it's a huge deal. Your package will most likely be delivered still(you would get your NOA1 within 1~2 weeks).. or possibly be returned to you(I don't know how long this would take).
Even in the most case scenario it would be lost somewhere, you could still always send a different package. It would delay your application process for a few days but still no big harm done.
You have no tracking number so you won't be able to contact USCIS for the whereabouts of your packages. However, you can check if your check has been cashed. Once they cash your check, you'd know everything is okay.
I think if you receive no NOA1, or no returned package, or your check isn't cashed within one month, you would probably need to re-submit a different package again...

They will deliver just like regular mail. No signature required.

Card Was Mailed To Me On July 8, 2015, we mailed your new card for Receipt Number WACxxxxxxxx, to the address you gave us. If you do not receive your card by August 7, 2015, please go to www.uscis.gov/e-request to request that we send your new card to you. If you move, go to www.uscis.gov/addresschange to give us your new mailing address. I guess next step is to wait for another update about USPS picks it up!

I'm in a bit similar situation like yours but there is also difference.
As a mother of a 17 mo old baby, I can tell you my husband feels extremely reluctant for me to find a full time job so far.
We are both Immigrants. He came from Russia but has been living in US for more than 10 years; I am from China and haven't yet received my 10 years GC. We are on our own, without any grandparents or relatives to take care of our baby since she was born. My husband doesn't trust any daycare or nanny to babysit our child because he himself was mistreated by his auntie when he was very little and she was babysitting him. Both his parents worked then. I quit my full time job that I loved and have been a SAHM since our baby was born, and I don't think I will be looking for any job until our baby turns 2 years and can talk properly.
Personally I sometimes feel frustrated with my current SAHM situation but I do respect and understand my husband's feelings. I have chosen to take the middle course by finding a flexible part time job so that I can telecommute from home and take care of the baby and house at the same time. My husband appreciates that, too, and tries to reciprocate in other different ways.
I suggest you sit down and have a thorough talk with your husband to find out if there is something that he fears or worries about, and sort things out.
