I'm anti-sweet potatoes unless they are baked with only butter & S&P on it.

Who eat yams/sweet potatoes anyhow???? And why ON EARTH would one decide marshmallows (beef bone anyone?) go with them???

OMG that is something I MUST have every year. I cube mine up, boil them slightly and then put them in a casserole dish and mash them gently with a fork. Then I sprinkle brown sugar, cinnamon, and put pats of butter all over! YUM :thumbs:

VJ Hours - I am available M-F from 10am - 5pm PST. I will occasionaly put in some OT for a fairly good poo slinging thread or a donut.

I am not a big fan of sweet potato but hubby found this recipe called two potato packets...

you slice up some red potaotes and some sweet potatoes and layer them on some foil and then you add some butter on top with some sliced onion and some fresh herbs, like rosemary, oregano or basil and of course some salt and pepper.. then you fold them up and cook on the BBQ.. once done you open the packet and add some grated cheese that melts really good and then close the packets up and wait for the cheese to melt... this is delish!! :thumbs:

I have also made it in the oven, I just layer everything in a baking dish and cover it and bake....

As for sweet potatoes, because they DO have so much flavor on their own, they are great just baked with a little butter, or roasted with a little olive oil and seasonings. No mushy goop thanks... LOL

For my first ever thanksgiving.. Not last year but the year before... Someone did a sweet potato casserole, but I think it had pecans in it too? UGH! It was fantastic! :thumbs: I don't seem to remember there being any marshmallows in it though...

Sister Fracas, you stole my post about cooking with Yukon Gold potatoes.

We think they're the closet thing to a decent irish potato you can get in the US. Kinda floury and yummy.

And YES marshmallows go with sweet potatoes. It's not like the whole fluffy blob is lying there on top of the raw veg. You melt them in a double-boiler and it goes into the rest of the ingredients before the casserole is baked.

Ever had deep fried sweet potatoes? Yum..........

:thumbs: If you use marshmallow fluff, you don't need to melt anything... it will melt in with the hot potatoes as you mash them.

We're also not talking about a 1-1 ratio either... just enough to enhance the flavor and add some consistency to the potatoes.
