I am an american citizen and I would like to know if I can file a petition of green card for my son. he is 27 years old, still single but getting married next year. He has visitor visa, his fiance has italian passport so she can also come

First I would like to know if I can file a petition for him as citizen and if he can come and do adjustment of status, also how will that work if he gets married

You can certainly petition him and he would able to bring his wife

 

he will interview at his local consulate

Yes, absolutely. He'll need to be married to bring his wife for her to be able to be included in his application. As said above adjustment of status isn't an option. 

 

So petition him and then wait, he can visit in the interim.
