I'm the USC and I filed the I130 online while I was with my Husband in his country. 2 months later, I'm back in the US and I would like to change my last name to his. Does anyone know if this would cause an issue with USCIS or with anything in this process, since it's already been started? Would I need to upload a scan of my passport or anything else with the name change to the unsolicited evidence section? Or would it be advisable to not change my name at this point?

No issue.

I suggest submitting a letter stating you are taking your spouse’s name, and include a copy of your DL or U.S. passport and your marriage certificate.

For the beneficiary I am always argue to change the name either before I-130 or after (and not as a part of N-400), but the petitioner is a free agent. Hopefully you have several official copies of the marriage certificate in case any agency wants to hold a copy for examination.

Start your name change with SSA. And for that, take the opportunity to drop the middle name(s) if you have any, since SSA policy is that middle names do not exist.

No need to do anything at all related to the I-130.  Once you have new ID, send scans to your husband to take to the interview with him.  It's not really important evidence your relationship is bona fide, but it might help.
