Is a copy of just biographic page of the US passport enough as a proof of citizenship for a sponsor or USCIS wants to see all pages? My husband (born in the US) has his passport and short version of his birth certificate. I just read that USCIS doen't accept short version of BC. Will just copy of a biographic page be alright or we need all 50 page from his passport if we go without any birth certificate?

It is enough for now.

If there is an I-485 interview, the letter can ask you to bring your husband’s long form U.S. birth certificate

The ISO can ask at the interview for this document regardless

Work in getting the long form U.S. birth certificate after filing I-485.

Also your husband is both petitioner and sponsor. Provide a copy of biographic pages (photo page plus signature page) for I-485 and another copy for I-864.
