My wife has filed I485, I131, and I765 and recently received NOA. The case numbers begin with IOE.

How do we know which Service Center is processing her cases? The address on the NOAs say

National Benefits Center
U.S. Citizenship & Immigration SVC
P.O. Box 648003
Lee's Summit MO 64002

We need to know the Service Center in order to look up processing times from this site: https://egov.uscis.gov/processing-times/

Mine started with IOE and it was at Potomac but IOE just means it was filed electronically.

OP is going through AOS from K1, so they filed by paper mail.  There is no e-filing option for I-485.  IOE in their case means that their paper-filed submission was scanned by USCIS into their system.
