My spouse case has been approved since December 2020 and I am wondering when will she get interview date.

Not enough information.  Which country?  Approved petition, or documentarily qualified through NVC?

If you were to properly fill out your VJ profile and timeline you would see other timelines for Ghana consulate.

It looks like people who were DQ’d in May/June 2020 are now getting interviews at Ghana. According to that you still have a few months wait.
