I-864 expired 09/30/2021 and no option to change number of household

Do not complicate your case by uploading 2 versions of the I-864.  The one with electronic signature is useless -- do NOT upload it.  Do not risk delaying your NVC review by confusing the agents with 2 I-864 forms from the same sponsor.

And what other documents do I need to submit under the supporting aos documents?

Your case can only be DQed after you submit all required documents and all submitted documents are accepted by NVC.  If even 1 document is missing or rejected, your case will need another round of NVC review.  There are rare reports here on VJ of cases with NVC RFE that were DQed just a week or so after re-submission.  It's more common for cases with RFE to be sent to the back of the line upon re-submission.

What about the additional supporting documents? There is no doubt that my  required documents are good, but maybe from my additional supporting documents- some of them to not be accepted. The question is what happens in that case?

No one can say until you actually submit.  The most you can do is to follow the I-864 instructions and the DOS links posted above as best you can, to increase your chances of getting the document submission right the first time.

You are getting answers, but still not reading and following instructions.  Doing so will be critical to your ultimate success.  If you don't carefully study instructions, you won't know what you don't understand, won't know what to ask.
