Finally we got interview in next month, and checklist "we must bring" IF required a completed form I-693....do i need to take to interview i-693?

If it has been less than two years since the physical was completed for the K1, a new I693 should not be necessary.

As long as you filed for AOS within 1 year of the medical and vaccines were completed abroad, no 693 is required.

That's not how medicals done abroad work. As long as they filed for AOS within 1 year of the medical and vaccines were completed, they don't need a new one.

What matters is the time between the date the medical was performed and the receipt date of your AOS. Forget the date of the interview.

Medical record and vaccines was sent to embassy in May 2019 (for interview K1) , filed for 485 in November 2019, is that means 1 year between this period?

Yes. You filed for AOS 6 months after the medical, so you don't need a new one as long as your vaccination sheet is marked completed.
