@pushbrk Thank you for all the advice. I really appreciate it.

Last question, In your opinion should I request a copy of the previous petition denial to have on hand in case it comes up in the interview?

In my opinion, that is not necessary.  Sounds like your memory of the events and circumstances is sufficient to fully inform your fiance.

I would pursue it further and see if you can get information on what happened with the case - I have a friend whose wife petitioned for him - they broke up before the interview, so in his case there wasn't a notice to deny.  However, years later when he went to apply for a visa, the case showed up as a pending petition and screwed up his application at the interview.  I would make sure that the case was actually denied and closed - You just state that you received a notice of intent to deny, not just the actual denial, and you did nothing further - Make sure that the case was actually denied, or if it's still pending.

So you got divorced after the visa was denied?

Looks like the new fiancé is from the same country again. They will look for patterns of the same circumstances repeating themselves. On the NOIR they will have listed specific situations and incidents or certain answers that were given to questions during the interview as to why they feel the relationship is not genuine. Make sure you are not making the same mistake again. Any red flags with this relationship? Quick engagement very soon after first meeting? Big age difference? Limited time spent together in person?

Fiance is from the same country. Engaged after 1 year of being in a relationship. 6 year age difference. Two in person meetings. Limited time meeting in person mostly due to the pandemic. My trip was longer but needed to fly out before the borders closed. 4 days on one trip 7 on the other. I know it might come up so I am trying to keep it positive and be ready. I'm not sure what to expect

That's also a good point since I don't have any of the paperwork. It was over 15 years ago. What are the chances that'd still be pending?
