Is there any way to see/track the number of K-1 entries day by day? And countries of origin connected to those K-1s?

I don't think I have ever seen POE activity disclosed on that level.

I'm sure DHS / CDC have surveillance into that and some correlation data.  But just knowing the passports holders nationality doesn't mean they entered from that country.

My wife and I travel a ton (well not since March;) ).  She's Filipina but we have never flown non stop from the US to the Philippines.  And to make matters worse we will often go into a gateway hub like Hong Kong and then on seperate tickets go to the Philippines then Malaysia and back to Hong Kong.  Then when we get back we use Global Entry so no one ever asks use where we have been unless we get a random referral.

Maybe all of that will change now - ask me in a month!

The DHS has got a bunch of statistics https://www.dhs.gov/immigration-statistics/yearbook/2018/table25.

They have total entries per year for K visas. They even have to which cities or states K visa holders enter through (if interested, you'd have to download the DHS's excel spreadsheet).

But the information you're asking about daily entries is not available.

I learned the hard way, I hope YOU don't have to. Advice: learn, learn, learn.
