Y’all be careful.  Don’t  be out more than 12 months without a travel document, don’t set up any assets outside the US.  He makes money, get it over to your joint accounts.  Every bit of business needs to use US accounts and US assets.  Lose the green card and you have to start over.

I know of a number of couples living overseas that listed their family members home as residence.    Embassy had zero issue with that

Intent to reestablish domicile is normally fine for most overseas embassies and consulate.  Read the wikis and guides on what that entails.  Regardless financial sponsorship may be an issue for you as paychecks overseas may not qualify for the I-864 and the I-864p guidelines if the job will not continue after residence in the USA is achieved.  Assets of course can be used but they should be in USD and as liquid as possible.  You likely will need a joint sponsor.
