Yes we actually got the letter on March 2nd for a March 15th date. We just walked into the Application Service Center on March 5th.
So even if you are scheduled on a day you can walk in or reschedule. They are very accommodating.

Make sure you get the baby's US passport before she leaves the US with the baby.  That process including birth certificate may add a few weeks to your plan.

Yeah but don't travel after the extension letter expires. RoC takes super long that your wife could become a citizen and get a US passport without ever getting the 10-year GC.
