Our petition got approved and now we are just waiting for the NVC to send our case in the Philippines. My question is, will my Affidavit of Support will be affected if I change jobs? I will still have a full time job but it will not be the one that's written in my Affidavit of Support.

Theoretically it needs to be current as of the date of the interview.   Why not update it?

Yes it will be affected since the I-134 is presented at the interview. So it will have the current employment information and evidences included.

No it won't hurt the public charge case to switch jobs to another financially-qualifying position.

Like @payxibka advise you just do an update. Include everything asked for with the new employer instead. USEM is only interested that you meet the poverty level for your household size not the time on the job. BTW, they haven't asked for AOS information at the interview for more then 4 years now. It's best to be prepared but don't be surprised if not asked for.
