Long as the embassy you are going through allows for co-sponsors for K-1 visas, then as long as the co-sponsor satisfies the financial requirement, you should be fine.

Other Canada members will have to assist on that, I believe they do allow for co-sponsors but not entirely sure myself. Try searching here on VJ for the answer.

Do you know how its calculated? Would they combined mine and the co-sponsors income to a total?

Co-sponsors for Montreal are permitted.  They do not combine income with you and must meet the income or asset requirements individually. Montreal however often uses the I-864 income requirements of 125% vs 100%. Remember your co-sponsor will likely need to be a joint sponsor as well for the AOS

Also important is that your beneficiary will be entirely dependent on you and their own savings for 4-6 months after filing the AOS as they will be unable ro legally work.  If you do not earn enough you should consider the CR1 instead as the Canadian beneficiary can work asap.
