Do I do write up and print off two different pieces of paper for our letters of intent? Or do both on one piece of paper?

And also, should I use today's date? Even though we probably won't have everything ready to send out for another week or so?

And last question, how can I find out which address to put down for the filing location? And which address for the embassy?

Petitioner is from Maryland, US. Beneficiary is from BC, Canada.

Yes, separate pages. One page for each.

 

You can use todays date or just predate it a bit like say 15th of May.

 

And use the address for USCIS that you mail the petition to. The embassy address is used later for the updated letter of intent at interview time.

06/30/2016 : I-129F Packet Sent

11/08/2016 : Interview - APPROVED!

11/23/2016 : POE - Dallas, Texas

From sending of I-129F petiton to POE - 146 days.

 

02/03/2017 - Married 

02/24/2017 - AOS packet sent

06/01/2017 - EAD/AP Combo Card Received in mail

12/06/2017 - I-485 Approved

12/14/2017 - Green Card Received in mail - No Interview

Yes, it's one of those addresses depending on how you plan on sending the whole packet. Also, I recommend modeling it after the sample with your name address and contact info.

What's the difference in which address/way of sending the package? Is one better or faster?

Perfect, I've just done that. I think I've got it all filled out perfectly, just trying to figure out which address now.

For US Postal Service, you usually don't get a tracking number and gets there slower (from my experience). For UPS, Fed Ex, Express mail you can usually get a tracking number and have it delivered within a couple of days. I sent mine to Lewisville, TX through UPS, even though I live in Texas. I received a tracking number and it was delivered next day.

USPS does have a tracking service with Priority Mail. We did that and it was supposed to be 2 days delivered. However, it got delayed in the destiny mail office for 4-5 days, so I wouldn't recommend it, honestly.
