OP,

You have to decide what you rather want;

K-1 Fiancee visa - reckon about six to seven months to have the visa in hand and able to travel to the United States to get married there within the 90 days frame to suffice the purpose on the visa. Afterwards you file your adjustment of status for permanent residency and work authorization. Receiving the authorization within 90 days also, green card generally 7-12 months. This route is preferable if you want to be together as soon as possible but you do not get to work (and drive) until you at least receive your work authorization. 

CR-1 Spousal visa - this route takes about a year or a little longer to be approved and visa received but you are a permanent resident upon arrival in the United States aka receiving your green card after moving to the United States. This is cheaper than K-1 but you'll be long distance married but you also don't have to go through any hassle of petitions in the US after arriving until removing of conditions is due. 

Direct Consular Filling is an option if he has been living with you for at least six months.

Slight correction: The USC must have been legally residing (not just visiting) in the foreign country for at least six months. The USC and beneficiary does not have to have lived together.

If it isn't difficult, it isn't worth it.

I have a question, we are currently living in Germany until June and I'll live with my family in Brussels while he is back to the States. Do I have to do everything from Frankfurt or can I do it from Brussels? That doesn't make a lot of sense to come back in Frankfurt once I live in Brussels ?!

You can interview in any country where you are either a citizen or legal resident. Make sure to indicate on the i129f which consulate you wish to interview at.

If it isn't difficult, it isn't worth it.

K1's are processed by USCIS in the US and by the consulate in the local country. Had you been applying for a CR1 through consular filing, it would have required a USCIS office. But, you're not - so no need to worry about it.

If it isn't difficult, it isn't worth it.
