K2 who is student at the US university, AOS question

Hi everyone,

 

My daughter goes to college in the USA, she is on her 3d year now. My fiance put her in I-129F petition as my minor child (she's 20). The plan is as soon as she finishes this year (end of April), she returns home, goes to the interview, gets her K2 (hopefully my K1 will be issued by then), her F1 cancelled, and returns immediately to the USA so we can file for AOS together. My concern is that fiance and I will be living in Texas, my daughter's university is in North Carolina, so she will be there. Will it cause any problems? Where she will have her biometrics done, in Texas, or they can do it NC? Is she supposed to attend an interview together with us? What if the AOS isn't finished by the time she turns 21, which is in January of 2018, what happens to her status, and to her study? Will she be allowed to finish and graduate while AOS pending? 

Sorry for so many questions, but  I am really worried, and there is not that much information about K2 in general, and K2 being a US college student particularly.

10/18/2016 - NOA1 receipt date

11/23/2016 - RFE (regarding IMB)

12/08/2016 - response to RFE received by USCIS

01/18/2017 - APPROVED (94 days)

01/23/2017 - NOA2 hard copy received

02/03/2017 - called NVC and got case #; case left for the Embassy same day

02/06/2017 - consulate received the case, status READY.

03/14/2017 - medical exam - sent for TB tests (takes 6 weeks)

03/22/2017 - interview at the Consulate, visa approved, pending the results of the medical

05/10/2017 - status changed from AP to ISSUED

05/20/2017 - POE Washington D.C.

05/27/2017 - MARRIAGE!

06/08/2017 - received SSN

30/06/2017 - applied for AOS

29/09/2017 - EAD approved

18/05/2018 - filed for EAD/AP renewal, I-485 is pending
