I'll bring the receipt for the ring (and the ring on my finger of course!) to the interview at the embassy when that day comes. It's not necessary of course but I'm the kind of person who rather do too much than too little, and since I already have it - why not?

You can bring it but he won't look at it. You will walk up to the window and a guy will read off a checklist of things you are going to give him. More evidence is not one of them.

Honestly don't see how a ring would prove a thing. But I'm glad for you.

We included the engagement ring receipt and we also have receipts for wedding rings if needed but we don't expect it will mean much. She will be wearing the engagement ring at the interview. The Letter of Intent and other primary evidence is the important part.
