I have copies of her passport and visa. So I should also get her au pair papers and certificates? We both took a trip to Santa Cruz, but my name is not on the papers because she payed for the trip. We do have photos at Santa Cruz though. I may have bought something on my card at Santa Cruz.. And credit card purchases? How could I prove that? I have a lot of stuff that I bought for her. But how do I prove she was with me on the same day and same time?

Do you still have boarding passes from that trip?

You can show a copy of her visa from being in the US. Copy of her job contract. Receipts, bank and credit card statements from when she was in the US, along with photos of you guys together and with friends and family. If you have any together in front of any known landmarks, then even better.

We drove. I hope I can find something on there. Will this keep us from getting the visa? :(

No as long as you can prove it through other means. Photos together in front of famous places or monuments for example. And don't focus on just that one trip, think big picture. You want things from the whole time you were dating up to you guys filing.

Take copies of her J1 visa, DS-2019 Certificate Eligibility For Exhance Visitor (J1) status (if she doesn't know which one that is, it's the one she needed signed for travel as well as has info about her and her host family), photos, banks statements, receipts for gifts etc.
