You can do an updated letter. Same body of text as the one you sent with the I-129f but with the current date.

How many years tax returns do we need to provide with the affidavit of financial support??

I think it depends on the embassy, mine only asks for previous year, and some ask for at least 2. You can find embassy specific information here on VJ or if your embassy sends you a Packet.

We're still at the NVC stage and I'm feeling so nervous that I had visions this morning about the interview. I would make my interview ASAP when we get our case number. Just like Abisflores said we dont want to prolong the agony.
