This might be a dumb question and answers are probably somewhere on this site but I can't find it. So what exactly is needed for the affidavit of support? I've heard rumors of tax returns and bank statements going back 3 years?? Also is there a certain amount of money I should have in the bank? Or a certain amount I need to earn?

What's customary can vary from one country to another. Best thing would be to read in the Philippines regional forum to learn what documentation is typical there.
