My fiance is in the US army and we met two years ago.

He has visited my country once this year although he had tried in 2011 but was not able due to a travel ban during that time.

My K1 visa interview is in January 2013. Would a single visit affect the outcome?

In every area one visit is a red flag. The higher fraud the area is the more of an issue this is. You know this is an issue and you need to go the extra mile to show the interviewer that this really is nothing.
