There is no point in including anything extra if you make above 125% of the poverty guidelines with your income from your job. The rest of the form is for if you do not make it but want to use assets or savings in the bank or other things to qualify to sponsor without using a co-sponsor.

Your I-129f was approved in 5 days from your NOA1 date.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

ROC was approved in 3 months and 2 days without interview.

They look at the current income and current years returns. You should not need a co-sponsor.

Yes, include your 2012 paystubs as well, and be sure your fiancee can say what you just said... about you were student... or include copy of diploma as well (if you finished) to help tell the story.

If your life insurance policy is paid upon your death, then it won't count as an asset for you. However, if you have an indexed universal life insurance policy that allows you to withdraw from it while you're alive, it's possible. However, there are age restrictions on that policy, so more than likely, you shouldn't include it on the I-134, unless your policy offers payout options while you're still alive.
