A pupusa (from Pipil pupusawa) is a traditional Salvadoran dish made of thick, hand-made corn tortilla (made using masa de maíz, a maize flour dough used in Latin American cuisine) that is filled with a blend of the following: cheese (queso) (usually a soft cheese called Quesillo found in all Central America), cooked pork meat ground to a paste consistency (called chicharrón, not to be confused with fried pork rind which is also known as chicharrón in some other countries), squash (ayote), or (pataste), refried beans (frijoles refritos), or queso con loroco (loroco is a vine flower bud from Central America). The two most common pupusas are the pupusa de queso (cheese) and more popular pupusa revuelta with mixed ingredients of queso (cheese), frijoles (beans),[1], and chicharrón. Pupusas are typically served with curtido (lightly fermented cabbage slaw with red chilies and vinegar) and a watery tomata salsa.

I left work yesterday and to my dismay, the "El Salvador Deli" near me is no more and the other restaurant I know of is 1/2 hr away

I've always wondered why anyone would voluntarily eat pupu, si man.

Funny tangent: Took Mrs. T-B. to various Mexican border cities last December. In Nuevo Laredo (nice city, genuinely, si man), we stopped at a good restaurant where we were just about the only customers, due to the time of day. Mrs. T-B. kept asking the many hovering waiters about stuff on the menu: "Que esta?" ("What is this?"). They explained politely, but looked increasingly confused as the queries continued. I accurately deduced that they were flummoxed in regard to someone who spoke fluent Spanish but didn't know jack about basic Mexican cuisine. On our way out the door, I mustered my entire Spanish vocabulary (other than "besa mi cu... er, nalga") and explained to one of the waiters, who politely saw us out the door, "Mi esposa es una Ecuatoriana" ("my wife is Ecuadorian"). The guy's eyes lit up and he said "Ah! Si!" and hightailed it back inside, presumably to tell his colleagues that the mystery was solved.

I was more than half-glad to get Mrs. T-B. away from Mexico, si man; she wanted to eat everything, and she didn't have to speak a word of English on either side of the border, no man.

Pretty much they're chicharrón-filled (and other ingredients) arepas... you can never go wrong with these. Just avoid overdoing it (anything above 2), otherwise you'll be condemned to an extra hour on the treadmill to make amends.

I'll take any kind of tamal, be it the Puerto Rican Pastel or Empanada kinds, the Mexican kind, the Colombian kind (the Squirrel must have one of those)...

Mmmmmmm Pupusas are so great. I've been to numerous Salvadorian restaurants, but nothing compares to the ones that my sister's mother in law makes. Damnit, now I want some.

Question to all: Why would this comestible item be called a "pupusa" unless it were filled with pupu, huh man? And, why would anyone voluntarily eat pupu, huh man?
