Do i really need to show the 3 years recent original tax form? I only have the 2008 original tax form of my co sponsor. Is that ok?

In about 3 days - 2008's return would not be considered 'most recent.' Do you have to submit 3 years worth? No.

(P.S., I'm guessing the IRS has the originals, you/your-cosponsor would have copies.)

Post-04/15 be almost guaranteed that consulate's will want to see the 2009 tax returns.

The consulate is no longer involved. USCIS now only asks for copies or a transcript of the most recent tax period in support of your I-864 Affidavit of Support. For all practical purposes, that is now the 2009 taxes. You can optionally submit the last 3 years, if that helps to establish your capacity to earn above the limit.

If you are using a co-sponsor, you should get their 2009 tax copies or transcript to submit.

Ingats!

The OP has already interviewed but to add something for anybody else reading this----

According to USCIS documents, the tax return should be the most recent on the day the I-864 was signed. That means that if the I-864 Affidavit of Support was signed/dated prior to April 15, 2010, then the latest tax return required would be 2008. Of course if the 2009 return was already done (before tax filing deadline), then it's the latest.

For any I-864 prepared and signed after 4-15-2010, the most recent tax return is 2009.
