I SENT THE I-129F PACKAGE AND NOW REALIZED THAT THE LETTER OF INTENT TO MARRY IS NOT DATED ON HERS OR MINE.

IS THERE ANYTHING I CAN DO. OR WILL I JUST HAVE TO WAIT FOR THE (RFE)

It's unlikely that you'll get an RFE for that. If you do, no, there's nothing you can do until you get the RFE except make sure you have the new one DATED just in case.

Anyone else have an idea as to what i should do.

As previously said, at this point there is nothing you can do. It's difficult to imagine you'd get an RFE for an undated document, but if that should happen you obviously have no recourse but to accept the delay and send the new dated Letter of Intent in as asked. Once your packet is out the door, you have to roll with the punches.
