Last night we had butter chicken with basmati. Tonight we are going to see John Caperello in DC so I'll have an appie or something there but will have some h'ors d'oeuvres at our hotel beforehand. fun fun fun!

I woke up at 2 o'clock this morning <_< and haven't been back to bed yet. I hope I don't fall asleep at the show. lol

Mmm, I had chicken quesodillas tonight using leftover chicken from my dinner the other night from the slow cooker. Quite tasty!

Well, we didn't have the salmon that night. Went to Kohl's and spent kajillions of dollars, and by the time we got out of there it was too late to cook. Ended up with Popeyes chicken. I got a new Cuisinart Keurig, though! Coffee's never been so much fun. lol

Last night we had the salmon with chicken-and-wild-rice and a veggie mix of sugar snap peas, frozen peas, and onions. My husband complained that he didn't like the two types of peas mixed together. lol. Tonight I am thinking we'll have pork chops with scallped potatoes and a roasted beet salad. Did you know that you can't find golden beets here anywhere? sux

Oh sure! There's no real recipe.... just what I had in my cupboard.

Ingredients:

- Lemon-pepper linguini (or regular if you can't find lemon-pepper)

- 1 chicken breast, cut into bite-size strips

- 1 small jar of marinated artichokes, drained

- 1 tablespoon capers

- ~ 12 olives (I like Unico anchovy-stuffed green olives but you can't get them in the US so any olives you like will do)

- half a vidalia onion, cut in half and then sliced with the grain (no idea how to explain this)

- 3 cloves chopped garlic

- 1 tsp chili/red pepper flakes

- 1/3 cup olive oil

Fry the chicken and onion in a bit of oil at medium temp. Add the garlic and cook for additional minute. Add remaining oil, artichokes, capers, red pepper flakes, and olives, and cook for another minute or two. Stir in cooked (al dente) pasta and serve topped with shaved parmigiano-reggiano.

Did you try Whole foods? i think I've seen them there. Also for anyone in the NOVA area - there is a Friday evening Farmer's Market in a parking lot by the Lifetime fitness off 29/28... excellent fresh veggies, a good selection of vendors.

Yes, tried the Whole Foods in Fair Lakes. Maybe they just didn't have them that day..... the spanish-speaking guy I asked wasn't very helpful. He showed me parsnips. lol. Holy smokes, have you been there? It's awesome!! They didn't have carrot cake, though, so thumbs down to that. lol. I also tried Harris Teeter and Wegmans. Didn't know about the Farmers Market, though! Thanks for that info. Hmm. You just reminded me that there's a couple of farm markets on Lee Hwy towards Warrenton. Maybe I'll pop in there. Hmm. Maybe the international market will have them.

yesterday I made a yummy chicken veggie soup... didn't really follow a recipe just threw some veggies, chicken and spices into the crock pot, set it on low and let it cook all day...
