As far as I know, once you are married in the US and your wife has her AP she is able to travel and re-enter the country, the laws regarding your re-marriage are up to the country your wife is from. Filling in that information would be helpful

she must enter the USA and you must have a "legal" marriage in the USA within 90 days. Whether YOU consider it "real" or not is up to you. As long as the govenrment considers it "real" you are in good shape. Then file the AOS. When she has her AP or green card, you can go back to her county and have a "real" wedding in YOUR opinion.

You can "get married" a many times as you like. The United States government will only recognize the first one.

Married is married. "Marriage" (verb) "wedding" and "ceremony" all have different meanings. If you can talk a priest into pretending to marry somebody already married, so be it.
