So... what happens if I can't get an interview before my NOA2 expires? Anyone know?

The consulate has the ability to (and will) extend the date.

Doing a quick search, it appears that the consulate /should/ automatically extend the validity of the NOA2. You may want to double check that, though. Doing searches has proved me wrong before.
