Good day all,
I submitted my wife's I485 AOS back in April and received an RFE not too long after (I needed to submit my proof of citizenship). Immigration acknowledged this receipt on May 27, however we have not heard back regarding a date for biometrics. It's now nearly 3 months. It seems the Minneapolis service center is open so I'm wondering if this is a COVID delay or if I should inquire further.
Any thoughts?

Most international students are graduate students whose majors are in chemistry, physics, biology, engineering, etc..and need to be in a laboratory to conduct their research.

I had an RFE where I, the USC, only had to send in proof of citizenship. I could have sworn I did with the original package but, it is what it is.
The good news for you is that it's an RFE and not a rejection

All of the above information is good but I'd like to add a comment on your SSN.
We waited about a month to get married and then about 2 weeks to apply for her SSN. I thought why not just get the SSN in her new married name (we had a copy of the marriage certificate by this time). The SS person couldnt find her under her married name in the system as the application has to be under the original visa name and name on the I94. Then it turned out (for us anyway) we had to mail in her documents for a manual review. Not a big deal as it added only 4-5 days to the process. So a week long wait that most experience turned out to be closer to two weeks.
But here's where the learning opportunity comes in - to reapply for your SSN under your new married name your I94 cant expire. Hers expired in the beginning of March and I think we tried to reapply in mid-March - after her I94 expired.
Now we're waiting for her AOS.
You dont 'need' the SSN card to be under your married name for most services (that I can think of) as long as you have your marriage certificate.
That's our experience and I hope someone finds it helpful.

This isnt too unusual. Not every country has a US embassy in it. Just wait for instructions.

One thing to consider could be to wait to get more pay stubs. They give you several months (3 or 4?) to reply with this additional information before they reject you. I had an RFE dated May 7 and I had until August XX to reply by. You might be cutting it close so you'll need to do the exact math to make a determination. But in the meantime you can still get the letter.

We filed for my wife's I485 AOS back in late April and received an RFE (actually for the I864 -Affidavit of Support). It's a super simple fix - I need respond with my birth certificate. My question is do they want a copy of my BC or the original document.

We just did ours and you're right - YOU wont have any of those but the US citizen will have tax forms and bank statements, etc. Remember, some of those questions are phrased 'Your and Your Household' and 'Your/You', make sure you pay attention to the context and point of view of the question. Just make sure you have health insurance...you don't want to be a 'public charge'

The same thing happened to me a few weeks ago. I submitted the revised I485 on the 30th and just received the NOA today....so not quite 2 weeks after mailing it off.

If it's OK, I'm going to tag along with this question and add an additional consideration. My intent is not to bogart OPs question.
My wife and I were going to try for a tourist visa for her mother next summer as well (all depending on the COVID situation). My tag along question is: how does age factor in, if at all? Her mother is mid- to upper 70s. She's never tried for a tourist visa here either.
