No choice but to go for the interview on the new date.
Unless you can get an earlier date.

There multiple things you could do.
Try incognito browsing, use a different browser, different computer or wait and see if it resolves itself.

Sometimes the red flags are not obvious. If that is the case, just build the best cr1 case that you can after getting married.
If you don't know why the k1 was revoked by now, you will like not figure it out.

True but cr1 with a higher probability of success, 5 months later or k1 with a lower probability of success.
If the k1 gets denied you will end up getting married and starting all over. It is up to you to decide. Also with the hope that the backlog is being clear, the wait might be shorter.

Sorry but now you are moving into the territory of visa shopping.
Currently, you have 2 options k1 or cr1.
You can wait out the k1 which you have already applied for or get married and apply for the cr1.
Personally, if you plan on to visit her in the next 2 to 3 months, I would say get married and file cr1.
It is a better case.

I would suggest you call SSA.
Ask questions like and You might get an answer.
1. Are they able to tell you how many work quarters you ex has earned?
2. If there a page to assist you calculate work quarters?
If they don't have a straight answer for you, how can you figure it out with other resources.

What exactly did USCIS ask for? We all think that you are reading too much into the RFE.
Tax filled or 2021 taxes? The sum of all the document sent makes the case not just one document
READ the RFE and respond to it line by line as it applies to you.
Don't try to read between the lines. Nothing to find there. As I have stated in the past, the requests have been simplified to the point that if followed, you do not require this forum or a lawyer to assist you.
FYI this does not mean that this forum is not helpful or lawyers don't have there place.

With most tax services, besides the cover page, the tax return forms are standard. So yes you can submit those.
Also it is possible to create an IRS account when you are outside the country. No restrictions.

FYI having about 13k in your account can be accomplished if you pull those funds from a credit card or borrow from elsewhere. It does not prove anything.
Like several comments before this one, read the instructions and follow the poverty guidelines that were provided.
Are you going to trust an immigration lawyer over what is written in black and white?
The USCIS/NVC forms have been simplified in a way to allow almost everyone fill them out without seeking any assistance even from this forum much less a lawyer.
There are so many things wrong with the level of fund that lawyer told you that I can fill a page with. I will stop at that.

I would assume stress is not good for you so rest and relax so you can carry your babe to term. That way you will be done with the interview before the baby gets here.
I still know some babies have their own timetable.

I would not worry about much since you just filed. Cases get moved around center processing times speed up and slow down. Also by the time those times are posted, they are already about 2 month (or there about) old.
Following those timeframes will just get you depressed.
I recommend you spend time getting to know your spouse better and making your case a stronger one for the embassy stage.

Would be easier for your spouse to find an attorney in the US to assist than one in Senegal.

Personally I think this is the best option but from OP's timeline, documents have already been uploaded to NVC so reentry permit it will have to be.

See the link below, section "Who Is Eligible To Complete This Form". Third bullet point.
Your spouse does not have to be in the US.

yes you can fill joint.
The first time you will have to file paper with form w-7 for an ITIN.
Look up the form, see the details.
You can still file married but separated and amend your taxes later or leave it.
Besides the additional document you will get, there is a likelihood that your tax bracket will be different. Money back for some but not all

I would add tax returns and that would be as good as it gets unless you have kids.

That could cut both ways.
If you are trying to show comingling of finances, try a joint tax return and/or beneficiaries on insurance and retirement accounts. Those I think are stronger proofs.
At the same time, keep in mind that since your spouse is outside the country, it is difficult to have the normal joint accounts that most married people have.

NVC does not have a location for appointments, in the past, you were able to mail them documents, now I think it is all online.
Read the link below to ensure that your documents comply with their requirement.
Also call them to find out why your documents are being rejected.
If you uploaded the same soft copy that you did the last time, I would recommend you rescan the documents again. Those files may be of bad quality or corrupted.

Adding someone to accounts some of these accounts can be problematic because beneficiary does not have a SSN.
Filling your tax as joint carries more weight.

The green card fee can be paid before or after you enter the US. See link below
If paid before you enter, your green card will begin to be processed once you enter the US
If paid after you enter, your green card will be processed after the fee is paid. You will be sent a reminder to pay it.

This could vary from airport to airport. Follow the signs and/or ask questions. It will take less time to figure it out than it has taken for you to ask or me to answer the question.
You are stressing yourself trying to figure it out even before you get to the airport.
Just make sure to use the correct visa especially if you have multiple.

You said you have your SSN and are not working.
From the little that you have said so far, I think you guys will be better off filing married joint. No need for ITIN.
If your spouse files married but separate, you don't have to file because you don't have any income. In most cases, he will end up paying more in taxes (or getting less refund).
FYI: The choice of filing joint or separate still depends on your individual situation
