You need a visa to enter Canada. The advance parole is only for entering USA, not other countries.

Because they schedule it themselves. It works like you are scheduling interview for tourist, student or work visa. Most places have online system. You log in see when a date is available and schedule it. NVC has nothing to do with it.

Yes, it is normal. The package will come with his passport. They don't hand them in the embassy. Once he receives the DHL package, it will be inside.

You would want a replacement card because on your current one says "Valid for work with INS Authorization only". On the replacement one, this label is removed. So if I were you, I would mark "Yes".

They are actually not interested if it says "The above petition has been approved" but the next sentence. Make sure it says "We have sent it to Department of State National Visa Center" and NOT "The petition indicates that the person for whom you are petitioning is in United States and will apply for adjustment of status." If you have the second sentence then they messed up and think that the relative will do "Adjustment of status" and won't send it to NVC but will wait for I-485.

Congrats! You have been approved! Just check your tracking # on DHL site from the air bill or if you are very anxious, call the consulate on the phone and ask them if they send your passport. They are very nice on the phone. The package will contain your passport with your visa and an envelope that you must not open and give it to the immigration officer on the first US airport that you land on.
