US Immigration from Peru

I just received an email from NVC informing me that they have scheduled an interview for my stepdaughter in September. The problem is that my wife's application hasn't even been DQ'd yet. Since my understanding is that the applicant must enter the US within 6 months of receiving their visa, my concern is that if we go ahead with the interview for my stepdaughter and my wife's process stretches out another year we could have problems entering the country since my stepdaughter's visa will have been issued more than 6 months prior. I'm guessing the right move is to postpone my stepdaughter's interview until my wife's interview is scheduled. Does that seem like the right way to go at this point?

My wife and I have been married over three years. I am from Peru with Spanish dual citizenship, she is American. We met and got married in Madrid, Spain.

We applied for a spouse visa back in 2019, as of now, we are waiting for our interview at the US consulate in Madrid in just two weeks (August 9). We think that we have everything in order to have our visa approved.

One week ago I got a really good offer with an American company for a full time remote job. I explained my situation to them and they're willing to wait for me to arrive to the US.

My wife is 7 months pregnant, we were planning to be in the US at least a couple of months ago, but you know sometimes immigration times get extended. So, my plan was to arrive to the US by the middle of August, if everything goes alright with the consulate. After that, we were planning to wait in the US (at my in law's house) two weeks to receive my social security card, so I can start working with the American company and then go back to Spain and have our baby here and then travel back to the US one month after our baby is born.

Why we were planning to do so? Well, we are not 100% sure that we will be able to find a health insurance that will cover my wife since she doesn't have currently one. And even if we get one, we will end up paying around 5K$ in the best case scenario. And on top of that, all of her checkups have been in Madrid and we feel more comfortable having our baby here. So my question is, would it be okay to leave after two weeks of a first entry to the US with my social security card, then come back to Spain to work for a few months here remotely and then go back to the US in November/December? Of course, we will travel back to the US before our visa stamp expires (6months valid). Do you see any issues that we might have by leaving the US so soon after my first entry and by working remotely from Spain?

As the title states, when can we travel outside the US after entering on an IR1?

My husband and I finally have our embassy interview date in August. We would like to plan an international trip to visit family in the fall.

Assuming we are approved in August and he can enter the US the same month, how long does he have to reside in the US before going on an international trip?

So we were administratively processed and lost a couple of months but were approved. We are now considering either just selling all of our stuff and moving before the visa expires as originally planned OR flying to POE to "activate" before it expires (in September) and then returning to Peru and moving to US in December/early January after my daughter finishes the school year here; I've also lived in Peru for a number of years so there is heaps that need to be taken care of as well.

Any advice from those that have done the second option? Do they still mail green card to address on file after you enter POE (fee is paid)?

Any pitfalls to the second option?

My husband finally received his visa appointment in Peru for his CR-1 visa. I would really like to attend the interview with him. I am living in the US now but plan to go to Peru at least for moral support. On the consulate website it says only the beneficiary is required to be there but do you know if it is possible for me to attend as well? Is there anything I need to do to make sure I am let in to the consulate?

Also, do you know what materials we are allowed to take in to this particular embassy (Lima, Peru)? We have a binder with all of our paperwork nicely organized but I heard rumors that binders, folders, etc isn't allowed- only papers. Does anyone know the details on this?
