When sending in evidence with I-129F, do I need to have our emails translated (they are in spanish) or is that just for official documents? I can translate them myself if need be but not sure that is needed at this stage.

Translate anything that is not in English. The people adjudicating your petition are Americans who do not necessarily know your language.

The longer it takes to introduce yourself the less you've actually accomplished

The OP's question though was to do with filing the initial petition with the I-129F with USCIS where if something is submitted in a language other then english will be inviting an RFE for a translation. At the interview stage documents and evidence can be submitted in either english or the language of the country in which the interview is held.

Campanita,

Translate the emails. Keep in mind though....are they being submitted as supporting evidence of having met within the required 2 year period or as evidence of the relationship of which is not required with the filing of the I-129F but will be required at interview stage.

You don't need to submit emails - at this point - normally people use them at the interview stage and do not require translation at that point. All you are trying to prove now is that you two have met - an email will not prove it - an airline ticket, passport stamps, pictures with Arenal volcano in the back will prove you have met. Good Luck

Not necessarily. We did not have any "hard" dated evidence of our meeting - being from Canada, my passport did not get stamped, and I would drive to the US to see her, so there were no airline tickets. All we had were undated pictures together, phone records (with appropriate gaps during our visits), my cell phone bills showing roaming in Cleveland and hers showing roaming in Toronto, email and IM logs. Nothing of in itself that would be considered proof of our meeting, but the preponderance of all of it together was enough that the petition was approved.

E-mails are useful if they have planning for trips, or comments of previous trips in the 2 year time they ask.
